To me, chickpeas are the star of the show! I love them for various hot and cold salads and making humous. I much prefer to buy dried chickpeas over canned because I don't really want any risk of BPA contamination. If you have an Instant Pot, these are super easy: 35mins if you want to use them in a salad, 40 mins for humous.
Chickpeas, also known as garbanzo beans, boast numerous attributes and uses. High in protein, fiber, and essential nutrients like iron and folate, they offer a wholesome addition to any diet.
You may notice some variation in the colour of our chickpeas — from light green to light brown. This is a natural result of slight differences in crop maturity and growing conditions. All chickpeas have been lab tested and meet food-grade specifications. The colour variation is cosmetic only and does not affect taste, texture, or quality. The colour will darken when the chickpeas are cooked.
Chickpeas are versatile and can be used in various culinary creations, such as salads, soups, stews, and curries. They are the main ingredient in popular Middle Eastern dishes like hummus and falafel. Ground into flour, chickpeas serve as an alternative for baking. I'm always amazed and inspired by agricultural businesses that started with a few farmers wanting to do something great, and Fieldstone Organics is one of those stories.
It started when a small group of organic Okanagan grain growers wanted to create more crop diversity by introducing healthy, under-marketed ancient grains like spelt into their repertoire, but needed a way to process them. Ancient grains require a different harvesting and cleaning process than modern wheat.
This is how Fieldstone Organics was born. They created a facility that can clean and package these unique crops, and now they buy and clean over 25 different crops ranging from wheat and ancient grains to seeds and legumes. They source only from certified organic farms in BC, Alberta, and Saskatchewan because they want their shipping footprint to be as small as possible. Their growers share the values of their customers: clean, sustainable food. Pretty amazing!
